Chanukah may be a memory but latkes are an excellent side dish all year around. This easy version has become a regular in our house.


Grate 8 red potatoes (no need to peel), peel and mash two additional potatotes and sauté 2 onions in 2 tbls of oil. Combine all ingredients and add salt and pepper to taste. You can add other spices as well. Bake on sprayed parchment paper at 190 C for 25 minutes. Can be served with applesauce or garlic/mayonnaise sauce.

Chanukah without oil does not sound right...but what if you are dieting or just can't stomach the oil.

Put your oil in a spray bottle and spray on a ceramic frying pan or some baking paper and bake. As to batters that need oil use apple juice, prune butter or eggs.
